Tutored by Pietro Demaio, author of Preserving the Italian Way, you will learn the mysteries of preserving the bounty of summer's harvest - perfect olives, eggplant, peppers - as well as the king of the sea- tuna.  Many inclusions in the day - espresso coffee and Italian pastries to start the day, a lunch of local specialties, a signed copy of Pietro's book to take home, plus you will be amongst the privledged few to taste the fruits of Pietro's Head to Hoof Workshop held this July - salamis, proscuitto, pancetta, etc.
